smash cake topped with whipped cream and berries

A light and fluffy healthy nail cake with no butter, no oil, and no sugar. Most importantly (since this cake is meant to make a big mess on baby's get-go altogether), this cake just requires five ingredients.

And just like that, our infant daughter turned 1. We wanted the classic smash cake photo on her start birthday, but every recipe I found seemed overly complicated with fruit purees and a long list of ingredients. I wanted something simple, then to the kitchen I went! And came out many tests afterward with this lilliputian gem - an affections nutrient-inspired healthy smash cake that is low-cal, fluffy, and fabricated with just egg whites, cake flour, foam of tartar, pure vanilla excerpt, and heavy cream (for topping).

The reality is that a smash block is only for the baby, so it doesn't need to exist fussy. Brand or buy a regular cake for the adults (I served my favorite Chocolate Bundt Block),only give the altogether girl or male child this fiddling carbohydrate-free birthday cake. He or she will make a glorious mess and you lot won't have to worry most baby's first carbohydrate crash. (Scroll downwards for all of June's messy "nail" photos!)

Smash Cake in a tin on a sheet pan

Past definition, a blast block is little. Ideally, information technology should be baked in a 5x3-inch pan (<-- be certain to select the "5x3 inch" size).  This little pan seems like a one-trick pony, merely I've been using mine all summer long to make this cake (with the addition of some sugar) equally an afternoon snack for the kids or light dessert for the adults.

If you merely use the pan one time, just pass information technology on to someone else with a babe that is turning one.

Choosing a Pan for Smash Cake

(Updated July, 2020) When I first published this recipe, I used a 5 10 iii-inch springform pan that is no longer available. Since that time, I have been searching for an alternative pan to recommend. I have tested this block with all three of the options below:

  • 5x3-inch Cheesecake Pan (BEST Pick; be certain to select the "5x3 inch" size): for a cake that looks just similar the 1 in these photos, this pan is your best bet. It is exactly the same dimensions as the pan I originally used and makes a sweet lilliputian block with tall sides. (Alarm: This is a sturdy pan but information technology'due south a pain to clean. After baking with it, I soak it and then run information technology through the dishwasher on the top rack.)
  • 5x2-inch Springform Pan: This is a petite little pan that actually measures slightly less than 5 inches wide and 2 inches tall. It is about the aforementioned width every bit the cake shown above, only has shorter sides. The recipe below makes plenty concoction to fill ii of these small pans. I've heard from many readers who use two of these pans to brand an ambrosial mini ii-layer cake!
  • 6x3-inch Springform Pan: This is a wider pan than I used for these photos with sides that are the same height. The cake information technology bakes is i inch wider than the cake shown above in photos, and so it is however a modest cake that is slap-up for smashing. Since this pan is slightly bigger than the pan used to create this recipe, I would recommend using the slider in the recipe below to make a double recipe. You lot may take some leftover batter, but this will insure you have enough batter to fill up the pan.

Ingredients for Affections Nutrient Smash Cake

One of the all-time things about this recipe is that it has very few ingredients. All you need is:

  • Egg Whites - Egg whites are the foundation of this low-cal and fluffy cake. Separate the egg whites and egg yolks advisedly to be sure no yolks are in the mix. (Don't desire to waste matter those leftover yolks? Employ them to make lemon curd.)
  • Block Flour - Cake flour has a lower protein content than all-purpose flour, so it creates more tender broiled goods. You desire your angel food cake to be light and fluffy, and cake flour will help you lot get there. Don't skip this ingredient. (And that extra block flour? Store it in the freezer and later you tin can use information technology to make the infamous New York Times  Chocolate Scrap Cookies. )
  • Cream of Tartar - This acidic powder helps to stabilize egg whites so they stay light and fluffy equally they broil. Don't skip it.
  • Pure Vanilla Extract - This volition contribute a light vanilla flavor to the cake. Feel free to skip this ingredient if you'd prefer to proceed things unproblematic.
  • Heavy Cream - Heavy foam (or whipping cream) is whipped into a light topping for this cake. This makes a great, unsweetened, "frosting" that leads to wonderful messiness for photos.

Saccharide in Infant's First Altogether Block

Many people prefer non to give their baby sugar on their first birthday. There'southward no reason to add sugar to a blast cake, since most babies volition smash the block and make a fun, photograph-friendly mess without the taste of sugar.

The bones recipe beneath is for a sugar-gratis block which tastes like unsweetened light, fluffy white bread. If you're okay with a pocket-size amount of sugar, yous'll find measurements for adding information technology. Adding the optional sugar makes this a cake that any dessert-loving developed would also dear.

Do you need cream of tartar in angel nutrient cake?

Don't skip foam of tartar in angel food cake. The cake volition rising higher with foam of tartar and will give it that light and fluffy texture that is so unique to angel food cake.

Okay, then let's talk near how to make this cake!

Step 1: Split Egg Whites and Egg Yolks

Y'all just need egg whites for this cake. It's important to carefully carve up the egg whites and egg yolks. If whatever egg yolk is in the mixture, the egg whites won't form the soft peaks you need in order to give the cake its light, fluffy texture.

You'll also want to let the egg whites come up to room temperature (most twenty to 30 minutes) before making the cake. Room temperature egg whites will beat out into soft, fluffy peaks more than easily.

Step two: Crush Egg Whites into Soft, Fluffy Peaks

This is the most of import pace (and the one I get the most questions about!). Combine the egg whites with foam of tartar and pure vanilla extract and and then beat them using a hand mixer or in the bowl of a stand mixer with the whisk zipper. The egg whites need to form soft, fluffy peaks. This should take 3 to 4 minutes of chirapsia on medium-high, only don't worry and so much about thefourth dimension.Focus on how the egg whites look. When they are properly mixed, the entire mixture will be opaque, white, and evenly fluffy throughout. Look for soft peaks that rise out of the mixture when you lift the beaters out and gently tip over on themselves at the top.

Step 3: Fold in Block Flour

Gently dust the meridian of the egg whites with block flour. Many larger angel nutrient cake recipes have you sift the flour earlier calculation it, merely in the small amounts used for this block, there's no need to take that extra step. Just sprinkle the flour over top and utilize a whisk or spatula to gently fold the dry out ingredients into the egg whites until evenly combined. Have your time with this pace - stirring too difficult or fast will compress the egg whites and cause your cake to lose book.

Step 4: Bake and Invert to Cool

Gently pour the batter into an ungreased 5x3-inch pan(<-- be certain to select the "5x3 inch" size) . Broil until the top of the cake is lite golden chocolate-brown, nigh 20 minutes. When the cake comes out of the oven, invert information technology and cool information technology upside downward. This seems foreign merely it will help the cake to maintain its height. You can cool it upside down on a cooling rack or but use two minor cans or jars to support it.

Reminders: Tips for a Light, Fluffy Affections Food Smash Cake

  1. Utilize a regular pan, not one that is labeled equally non-stick.
  2. Do NOT grease the pan. As the cake bakes, the egg whites will rise past clinging to the sides of the pan. Y'all will release it from the pan by running a knife around the edges once it cools.
  3. Let the egg whites come to room temperature before using.
  4. Beat the egg whites until soft, fluffy peaks form. Don't worry then much most the timing, just keep an middle out for opaque, white peaks that stand up up and and so tip over on themselves at the pinnacle.
  5. Gently fold in cake flour. Don't stir besides hard or yous'll compress the air bubbling in the egg whites.
  6. Absurd the cake upside down to allow air to broadcast and prevent it from sinking as it cools.

Sifting Cake Flour

Most full-size affections nutrient cakes crave sifting the flour to insure that information technology can be easily mixed in without deflating the egg whites. This pace is non necessary of making a single batch of the recipe as written. Just lightly dust the flour over the entire surface of the egg whites before mixing it in. If doubling or tripling the recipe, it's a good idea to sift the cake flour since you will be using more of it over a small expanse.

Brand Angel Food Cake Ahead

To make this block ahead, bake information technology co-ordinate to the instructions and permit it to absurd completely. Wrap information technology in plastic wrap and air-condition for upward to 3 days (allow it come to room temperature before serving.) You can likewise wrap it tightly in plastic wrap and freeze it for upwards to four months (defrost completely before serving).

"Frosting" for Smash Cake

The "frosting" for this block is merely bootleg whipped cream made from beating heavy / whipping cream until information technology is light and fluffy. For an easy (and photo-friendly) way to add the frosting, transfer the whipped foam to a small ziptop / plastic purse. Seal the bag and and then cut off one corner. Gently squeeze the whipped cream out over the top of the cake in bouncing rounds.
